2018 Domaine de La Garrelière "Cendrillon" Blanc, Loire, France, 750ml

- Sauvignon Blanc from the Touraine AOC with a splash of Chenin Blanc.
- From a small 3 hectare plot of 40-50 year old vines in flinty clay soils.
Harvest by hand in September 2017 - Yield 30 hl / ha approximately. Smooth pneumatic pressing (3 hours), 12 hours settling. The fermentation is slow, spent in vats for 2 months without chaptalization and on native yeasts. 1/3 of the volume of the cuvée has fermented in barrels of 500 liters. Malolactic made 100% without gluing, with filtration on the ground before bottling. The blending of the wines is done 1 month before the setting. Bottling made in May 2018.
